Fermented honey is probably the oldest alcoholic drink known to man. We think the ancient Egyptians were the first to enjoy it, but it has been a traditional drink in England for centuries.

I never thought of myself as being the answer to a prayer but apparently I was. Some years ago, I was approached by a Norfolk curate who also made mead to sell to parishioners and his local shops. He told me he had got a new job in New Zealand but needed to sell his stock of 2000 bottles to pay the airfare for himself, his wife and two children. I bought them and he said "I knew The Lord would provide" .The Lord also provided me with his recipe, which I have followed here. Hence, we call it The Parson’s Mead.

I find it makes a lovely aperitif on a summer evening before supper. Nice, cooled or mulled and goes surprisingly well with pork. I am told it is too cheap but I like to keep life simple.

Cherry Wine

No event is more widely anticipated in our family than the arrival of the cherry harvest. Somehow, I just associate them with sunny days and lazy evenings around the barbeque. Here is a wine, which will complement that feeling.

It is made entirely from Morello cherries, which I treat pretty much as if they were grapes. There is just enough sweetness to bring out the full flavour of the cherries.

I think this is going to be a summertime favourite.

Elderflower Wine

The scent of elderflowers is just so evocative of Spring. We pick the flowers on a warm sunny day in the hedgerows around the vineyard, drop them into boiling water and ferment with sugar before blending the result with grape wine from the previous year's harvest.

The wine is wonderfully aromatic, crisp and refreshing. A lovely Summer evening aperitif or picnic wine perhaps taken with a nice fresh salad.

Rhubarb Wine

So many of you asked me to add rhubarb to my list of fruit wines. So here it is. This is made purely from the juice of English grown rhubarb sticks which are frozen, gently pressed then fermented in the usual way.

It has a hint of pink and surprise, surprise, a subtle taste of rhubarb on the palate. I add just a little sweetness to offset the natural acidity. Makes a nice summer wine well chilled, I would guess.

Sascombe Red Pavane

Sascombe's Red Pavane is a dessert-style wine made from a variety of organically grown fruit. It is allowed to ferment to its full alcohol potential, which can take many months, and is matured for up to six years, partly in oak.
Tastes like Port best for accompanying desserts and social drinking.
This wine will continue to improve for decades. It keeps perfectly once opened, and can be used as a base for long drinks.
No chemicals, sulphur or animal-derived additives other than honey are used at any stage of the production process.
Red Pavane is sold in the following bottle sizes: 75cl, 25cl, 20cl and 5cl. Each size has a very distinctive bottle. The 75cl bottle is a Port-style clear bottle, boxed with hood and brochure. The 25cl bottle comes with wax and wick closure, and neck brochure in a gift bag. Whilst the 20cl bottle is a Slimline sophisticated bottle (Illlustration shows detail) with neck brochure in a gift bag. The 5cl bottle is 'bell' shaped and comes with wax and wick closure, neck brochure in a gift bag.
Typically contains 15.5% or 16% alcohol; not fortified.

Blackberry Wine

Sascombe's CoffeeMel makes an excellent aperitif and for drinking after dinner with chocolates, being sweet with a fresh subtle flavour against a coffee background. It tastes delicious either at room temperature or chilled.
Melomel the basis for this liqueur was named by the Victorians, and is similar to Mead but is made with the addition of rosehips. CoffeeMel is fermented for more than a year.
This wine will continue to improve. It keeps perfectly once opened, and can be used to create wonderful cocktails and desserts.
No chemicals, sulphur or animal-derived additives other than honey are used at any stage of the production process.
Lovely bottle has wax closure with neck brochure, in a gift bag. The wax closures are created using wax from Sascombe's apiary. Once empty, the bottle makes an elegant vase. Add a few drops of food colouring for variable effect.
